Researchers in Zurich say they have developed a more sustainable and healthier means of making chocolate, a snack that's as much associated with fat as it is with carbon emissions. Traditionally, chocolate is made with only a small part of the cocoa fruit, the cocoa beans, but the newly developed approach cuts down on food waste by using more parts of the cocoa fruit, some of which serve as sweeteners.
