Pfefferpotthast (Ragu)
Ingredients for 4 people: 1 kg beef (from the leg)50 g clarified buttersalt, pepper400 g onions1 l vegetable stock (instant)3 bay leaves2 cloves1 tbsp lemon juicegrated zest of 1 untreated lemon1 tbsp capersapprox. 50 ml beer Preparation: 1. Wash the meat, dab dry and cut into cubes. Heat the lard and brown the meat thoroughly. Season with salt and pepper. Peel the onions, cut into strips and fry for about 5 minutes. 2. Deglaze with stock and season the pot with pepper, bay leaf and cloves. 3. Cover and simmer for about 90 minutes. Then season with lemon juice and zest, capers and beer. Serve ...
