Cucumber strawberry salad with Camembert

Ingredients for 4 persons:

1 spring onion
1 cucumber
200 grams of strawberries
200 g Camembert, 60% fat in dry matter
4 tbsp orange juice (freshly squeezed)
Mark of 1/2 vanilla bean
1 tsp pink peppercorns, crushed
2 tablespoons nut oil (alternatively sunflower oil)
2 tsp chopped mint
2 oranges
A bit of salt
Some pepper
Mint for garnish

Preparation:

1. Rinse the cucumber, clean and cut into very thin slices. Mix well the orange juice with vanilla pulp, pink pepper, salt, pepper and nut oil. Stir in the spring onion and mint. Pour over the cucumber slices mix and leave to soak for a while.

2. Rinse, clean and halve the strawberries. Cut off the zest of the orange and
cut the fillets out of the white membranes. Collect the juice and add to the cucumbers. Loosely mix the strawberries and orange fillets into the cucumbers.

3. Cut the camembert into narrow triangles and place on the salad. Serve garnished with mint.
