Melon prawn boats with chilli dip

Ingredients for 4 persons:

6 tbsp sweet and sour chilli sauce
2 tsp honey mustard
2 tbsp finely chopped mint
1 tsp grated organic lime zest
1 spring onion
1 small cantaloupe melon
250 g frozen prawns (shelled, defrosted)
1 tbsp oil
Wooden skewers

Preparation:

1. Mix chilli sauce with honey mustard, mint and lime zest. Clean, rinse and chop the spring onions very finely. Stir in the spring onions.

2. Cut the melon into wedges and remove the seeds. Cut the melon flesh
from the skin and then cut into pieces.

3. Rinse the prawns and pat dry. Heat the oil in a frying pan and fry the prawns in it for about 3 minutes. Thread the prawns onto small wooden skewers and stick them into the melon pieces. Serve the chilli dip on the side.
