Ingredients for 4 people:

300 g pink mushrooms
3 medium onions
2 red-cheeked apples
1 tablespoon sunflower oil
4 slices (150 g each) of smoked salmon
150 ml vegetable stock
60 ml apple juice
100 g whipped cream
Pepper, salt
1 tbsp chopped parsley

Preparation:

1. Clean mushrooms, halve or quarter. Peel the onions and cut into thin slices.

2. Heat the oil. Fry the pork for 2 minutes on each side and remove from the pan. Remove from the pan. Add the mushrooms to the fat and fry for approx. 3 minutes. Add the onions and apple rings. Fry for 1 minute over a high heat.

3. Deglaze with stock, apple juice and cream, place the pork loin on top of the apple and mushroom vegetables and cook for approx. 2 minutes over a medium heat. Season with salt and pepper and sprinkle with parsley. Serve with mashed potatoes.

Preparation time approx. 25 minutes.
