Strong pork belly wraps with parsley stuffing on skewer, served with Roasted onion dip

Ingredients for approx. 8 skewers:

1 garlic bulb
6 tablespoons oil
1 tsp. sweet paprika powder
½ tsp curry
4 beef tomatoes
2 stalks flat leaf parsley
750 g long slices of pork belly (cut very thin)

Dip:
300 g sour cream
salt, pepper
4-5 tablespoons roasted onions

Preparation:

1. Peel 2 cloves of garlic, chop finely. Mix with oil, paprika and curry. Wash tomatoes, remove stalks. Cut remaining garlic bulb in half.

2. Wash parsley, pluck leaves. Wrap meat slices tightly around skewers wrapping parsley leaves as well. Toss skewers, tomatoes with the seasoning oil, cover and let stand for about 30 minutes.

3. Season sour cream with salt and pepper. Fold in roasted onions.

4. Grill skewers, tomatoes and garlic bulb on hot grill, turning, for approx. 8 minutes. Season with salt and brush with the seasoning oil.

5. Serve with the fried onion dip.

Preparation time approx.: 30 minutes (without waiting time)
