Pear Basil Smoothie Bowl

Ingredients for 4 people:

1 ½ glasses (à 580 ml) pears
1 large bunch of basil
200 ml coconut drink
grated zest and juice of 1 organic lemon
1 sachet vanillin sugar
30 g cashew nuts
30 g coarse oat flakes
30 g almond slivers
50 g sugar
To garnish:
Pear wedges and basil

Preparation:

1. Drain the pears in a sieve, reserving the liquid. Rinse the basil, shake dry and pluck the leaves from the stems. Roughly chop the basil. Cut the pears into smaller pieces.

2. Mix the pears, basil, coconut drink, grated lemon zest and juice, vanilla sugar and 125 ml pear liquid from the jar in a blender or with a hand blender.

3. Coarsely chop the cashews. Caramelise the sugar in a pan until light brown. Add the cashews, oats and almond slivers and stir until caramelised and golden brown. To cool, immediately pour out of the pan onto a piece of baking paper. Leave to cool and crumble roughly

4. Pour the pear smoothie into bowls and sprinkle the nut mixture on top.

Serve garnished with pear wedges and basil.
