Vietnamese Bah Mi

Ingredients for 4 people:

200 ml apple juice
1 tbsp BBQ sauce
2 tbsp honey
1 tbsp soy sauce
2 tbsp hoisin sauce
500 g Pulled Pork meat
1 carrot
150 g celery root
4 small baguettes
3 tbsp mango chutney
some fresh coriander
50 g bamboo shoots
chilli sauce, to taste

Preparation:

1. Put the apple juice, BBQ sauce, honey, soy sauce and hoisin sauce in a pan and bring to the boil.

2. Add the pulled pork and liquid and simmer for 10-15 minutes until almost all the liquid has boiled away and the meat is covered in a thick sauce.

3. While the pulled pork is simmering in the marinade, peel and julienne the carrot and celery. and cut into fine julienne.

4. Shred the pulled pork with a fork. Cut the baguettes open, spread with mango chutney and top with the pulled pork, julienne, coarsely chopped coriander and bamboo shoots. Serve with chilli sauce if desired.
