Cherry Clafoutis

Ingredients for 6 pieces:

500 g sweet cherries
150 g butter
90 g flour
140 g sugar
125 g ground almonds
1 pinch of salt
½ tsp cinnamon
Mark of a vanilla pod
2 eggs (M)
140 ml milk
50 g flaked almonds
Also:
30 g icing sugar
Organic lavender flowers

Preparation:

1. Wash and stone the cherries. Grease the ramekins (approx. 10cm diameter) with 10g butter and dust with 5g flour. Put the cherries into the moulds.

2. Heat the remaining butter and brown lightly. Mix the rest of the flour, sugar, ground almonds, salt, cinnamon and vanilla pulp. Whisk the eggs with the milk, add the butter and flour and almond mixture. Pour everything over the cherries.

3. Sprinkle the almond flakes over the clafoutis and bake in a preheated oven at 200C° (fan oven 180°C) on the 2nd shelf from the bottom for 25-30 minutes. Sprinkle the warm clafoutis with icing sugar and lavender flowers.
