Marmitako (Fish stew)

Ingredients for 4 people:

2 tomatoes
2 onions
2-4 cloves of garlic
3 green peppers
800 g potatoes, mainly waxy potatoes
2 tbsp olive oil
400 ml fish stock (ready-made or home-made)
600 ml vegetable stock (ready-made)
Salt, ground pepper
Hot paprika powder
500 g tuna steak

Preparation:

1. Score the tomatoes crosswise, scald with boiling water for 1 minute, rinse and skin. Quarter the tomatoes, remove the seeds and dice the tomatoes.

2. Peel the onions and garlic and cut into wedges. Cut the peppers into quarters, clean, rinse and cut into pieces. Peel the potatoes, wash them and also cut into pieces.

3. Heat the olive oil in a large pot. Fry the onions and garlic in it until golden.
Add the tomatoes and sauté. Add the peppers and potatoes. Pour in the fish stock and vegetable stock and season with salt, pepper and paprika. Cover and cook for about 20 minutes.

4. Rinse the tuna and cut into bite-sized pieces. Add to the pot, cover and simmer over a moderate heat for about 10 minutes.

Season to taste with salt and pepper.
