Salmon cutlet with peppered apple onion relish

Ingredients for 4 people:

200 g onions
20 g fresh ginger
400 g tart apples
2 heaped tablespoons of coloured peppercorns
250 ml apple juice
100 ml apple vinegar
75 g sugar
Salt, cayenne pepper
4 salmon cutlets (approx. 200 g each)
Lemon juice

Preparation:

1. Peel and dice the onions. Peel the ginger and dice very finely. Peel and quarter the apples and remove the core. Cut the apple quarters into fine pieces. Crush the peppercorns.

2. Bring the prepared ingredients, apple juice, vinegar and sugar to the boil, stirring occasionally. Season with salt and cayenne pepper. Cover and simmer on low heat for 15-20 minutes, then cover and continue to simmer for approx. 10 minutes.

3. Meanwhile, wash the fish chops and pat dry. Grill on a hot grill for about 5 minutes on each side. Season with salt and lemon juice. Serve with the relish.
Pour the rest of the relish into jars. Keeps in the fridge for 1-2 weeks.

Also goes well with grilled pork.
