Apple mustard soup

Ingredients for 4 people:

1 onion
600 g floury potatoes
3 tart apples
3 tablespoons butter
salt
1 tsp lemon juice
200 g whipped cream
Pepper
2 3 tsp medium hot mustard
50 g smoked salmon
1 bed of cress

Preparation:

1. Peel and finely dice the onion and potatoes. Peel and quarter 2 apples, remove the core and dice the flesh. Melt 2 tablespoons of butter in a saucepan. Sauté the prepared ingredients in it. Deglaze with 800 ml water, salt and cook with the lid on for approx. 20 minutes.

2. In the meantime, wash the remaining apple, cut into quarters and remove the core. Cut the flesh into fine slices and sauté briefly in 1 tablespoon of melted butter. Sprinkle with lemon juice and drain on kitchen paper.

3. Mash or puree the cooked potato apple mixture in the liquid very finely. Add the cream and bring to the boil briefly. Season with salt, pepper and mustard to taste.

4. Serve the soup in portions. Serve with apple slices, salmon slices and a short sprinkling of cut cress.
