Zucchini pasta on mozzarella cheese

Ingredients for 4 people:

1 kg zucchini
1 small green chili pepper
2-3 cloves of garlic
6 tablespoons olive oil
2 tsp grated organic lemon peel
salt, pepper
300 g mozzarella
4 tbsp. pesto (coriander or basil pesto, ready-made)
optional coriander or basil for garnish

Preparation:

Rinse and clean the zucchini. Slice or cut lengthwise into thin slices, and then cut lengthwise into thin strips. Slit chili pepper lengthwise, clean and remove the seeds. Rinse chili and chop finely. Peel garlic and also chop finely.
Heat olive oil in a large frying pan. Fry zucchini strips for 3-4 minutes, turning and adding chili, garlic and lemon zest. Season with salt and and pepper. Drain mozzarella and cut into slices. Place mozzarella on preheated plates and spread with pesto. Place zucchini on top and garnish with coriander or basil.
