Basil meatballs with lemon carrots

Ingredients for 4 people:

For the meatballs:

3 slices of toast
400 g ground beef
1 onion
1 clove of garlic
1 egg (M)
1 tablespoon medium hot mustard
salt, pepper
1 small bunch of basil
3 tablespoons olive oil
For the carrots:
1 bunch of carrots (500 g)
salt
4 tablespoons olive oil
1-2 cloves of garlic
a few sprigs of thyme
grated peel of 1 organic lemon
pepper

Preparation:

1. Remove crusts from toast and soak in water. Place ground beef in a bowl. Peel onion and garlic and dice very finely. Toast the bread and add to the mince together with onion, garlic, egg, mustard, salt and pepper. Knead everything well. Wash basil, shake dry and finely chop leaves. Knead into the mince. With moistened hands form cherry-sized balls and fry in hot olive oil.

2. Clean, peel and rinse carrots and cut into pieces. Cook in salted water
for about 8 minutes. Drain carrots. Heat olive oil in a pan. Sauté carrots briefly in it. Peel garlic and cut into slices. Add together with the thyme sprigs and fry. Season with salt and and pepper. Mix in the meatballs and serve together.

Serve with baguette or mashed potatoes.
