Asparagus salad

Ingredients for 4 people:

1 green pepper
1 shallot
juice of 2 oranges
3 tablespoons olive oil
Salt
1 pinch of sugar
100 g natural tofu
1 kg white asparagus
2 carrots
1 bunch rocket
100 g ham sausage, sliced

Preparation:

1. Halve the chillies, remove the seeds and rinse the pod. Peel the shallot. Dice the pepperoni and shallot very finely. Mix the orange juice with the olive oil in a large bowl. Add the chilli and shallot and season with salt and sugar. Dice the tofu and add to the marinade. Leave to marinate for approx. 30-45 minutes.

2. Peel the asparagus, cut off the ends and cut the asparagus into pieces. Peel the carrots and cut into thin strips. Rinse the rucola and sort out. Cut the ham sausage into strips.

3. Cook the asparagus in lightly salted water for approx. 6-8 minutes and the
carrots for the last 2-3 minutes. Drain everything, rinse in cold water and drain well. Add the asparagus, carrots, rocket and ham sausage to the marinated tofu, mix and serve.
