Cold Paprika Yoghurt Soup

Ingredients for 4 servings:

2 peppers, red
2 peppers, yellow
2 small onions
500g yoghurt 3,5%
1 bunch basil
½ tsp paprika powder
Chilli flakes
Salt, pepper
4 tsp yoghurt, chilli as basil garnish

Preparation:

1. Clean, wash and dice the peppers. Blend with a hand blender and a dash of water until no more coarse pieces are visible.

2. Dice the onions very finely, chop the basil finely and mix half and half with the yoghurt. Add half to the two soups together with the yoghurt and mix well. Season with salt, pepper and chilli to taste.

3. Pour both soups either into 2 cups per person or into a plate at the same time, so that the two different colours can be seen. Garnish with yoghurt, chilli and garnish with yoghurt, chilli and basil.
