Ingredients for 4 people:
80 g dried apricots
4 sprigs thyme
150 g long-grain rice
300 ml light chicken stock (instant)
50 g crème fraîche
salt, cayenne pepper
2 chicken breast fillets (250 g each)
2 tbsp oil
Thyme to garnish
Preparation:
1. Finely dice the apricots. Pluck the thyme leaves from the stems. Put the rice,
apricots, thyme and stock in a saucepan and cook the rice according to the instructions on the packet. Stir in the crème fraîche and season with salt and cayenne pepper to taste.
2. Salt and pepper the chicken breast fillets. Heat the oil in a frying pan. Fry the chicken breasts for about 12-15 minutes, turning occasionally. Slice the chicken breasts and serve with the rice. Serve garnished with thyme.
