Blueberry pancake

Ingredients for 4 people:

200 g flour
350 ml milk
2 tbsp sugar
1 packet vanilla sugar
2 eggs (M)
100 g apricot jam
Juice of 1 orange
200 g blueberries
Clarified butter for baking
To taste:
Mint leaves and orange wedges for garnish

Preparation:

1. Mix flour with milk, sugar, vanilla sugar and eggs. Leave to swell for 20 minutes.

2. Mix the apricot jam with the orange juice. Sort out the blueberries.

3. Stir the dough thoroughly. Stir in the blueberries. Fry in a little hot pancakes in a little hot clarified butter (best done in a small coated pan). Serve with the apricot dip. If desired, garnish the pancakes with mint leaves and orange wedges.

Preparation time approx. 25 minutes + 20 minutes waiting time
