Roast pork with garlic - mustard crust

Ingredients for 4 persons:

Pork loin (approx. 1.2 kg)
1 clove of garlic
2 tablespoons coriander seeds
2 tablespoons sesame seeds
100 g breadcrumbs
5 tablespoons mustard
90 g butter
1 tsp. rubbed thyme
1 tablespoon olive oil
salt
Pepper from the mill
1 garlic bulb
2 medium onions, peeled

Preparation:

1. Peel the garlic clove, cut it in half and rub it on the meat. Season meat with salt and pepper.

2. Roast coriander seeds in a dry pan and let them cool down.

3. Heat the oven to 200 degrees (180 degrees convection oven).

4. Mix breadcrumbs with mustard, coriander, sesame seeds, butter and thyme.

5. Heat the olive oil in a roasting pan and sear the pork loin on all sides. Allow to cool slightly and then coat with the mustard mixture.

6. Halve the garlic bulb, chop the onions and add to the meat in the roasting pan. Pour the wine and cook everything in the preheated oven for approx. 45 minutes.

Tip: Crispy roast potatoes are a good side dish.

Preparation time approx.: 35 minutes (plus waiting time).
