Small strawberry and champagne cream cake with almond meringue

Ingredients for 8 pieces:

100 g butter
275 g sugar
3 eggs (M)
1 pinch of salt
grated peel of one untreated lemon
6 tablespoons milk
120 g flour
2 tsp. baking powder
2 tbsp. flaked almonds
4 sheets of gelatine
200 g strawberries
2 tbsp. lime juice
250 g mascarpone
150 ml sparkling wine, dry
150 g whipped cream
Also:
Grease and breadcrumbs for the mold
At will:
strawberries decorated with icing and sugar pearls for the decoration

Preparation:

1. Beat the butter and 100 g sugar with the whisk of a hand mixer until fluffy. Separate 2 eggs. Stir in 1 egg and egg yolk separately. Add salt, lemon zest and milk. Mix flour and baking powder, then gradually add little by little.

2. Grease the bottom of a springform pan (22 cm diameter) and sprinkle with breadcrumbs. Pour in batter.

3. Beat the egg whites until stiff and add 100 g sugar. Spread the meringue. Leave 1 to 2 cm free to the edge of the springform pan. Sprinkle with flaked almonds.

4. Bake in the preheated oven (electric oven: 175°C; gas: level 2) for approx. 35 minutes. If necessary, cover slightly so that the meringue does not brown too much.

5. Allow the dough to cool slightly, remove from the mold and allow to cool completely.

6. For the filling, soak gelatine in cold water. Clean strawberries, wash, cut into fine pieces. Sprinkle strawberries with 75 g tablespoons of sugar, add lime juice and let stand for about 30 minutes.

7. Stir mascarpone and sparkling wine until smooth. Squeeze out gelatine and dissolve while lukewarm. Stir 1 tablespoon of the sparkling wine cream into the gelatine. Stir the gelatine into the remaining cream. Fold in marinated strawberries and chill for 5 minutes.

8. Meanwhile, whip cream until stiff. Cut base in half crosswise. Enclose lower cake layer with a springform pan rim. Fold whipped cream into champagne cream and spread on the lower cake layer. Place second cake layer on top.

9. Remove the cake from the springform pan again. Decorate as desired with delicate strawberry leaves and decorated strawberries.

Preparation time approx. 1 ¾ hours (without waiting time).
