Cheese spaetzle

Ingredients for 4 people:

500 g flour (finely sifted)
4 eggs (M)
salt
about ¼ l water
2 onions
1 tsp butter
250 g Emmental cheese
2 stalks marjoram

Preparation:

1. Mix flour, eggs, 1 pinch of salt and water to make spaetzle dough. Beat well
until it bubbles. Let dough rest for ½ hour.

2. Meanwhile, peel onions, cut into rings. Fry in hot butter until golden brown. Grate cheese. Wash marjoram, pluck leaves.

3. Bring lightly salted water to the boil. Scrape spaetzle dough with knife into
(it's easier with a spaetzle slicer). As soon as the spaetzle starts to rise, remove with a skimmer and drain.

4. Mix spaetzle, onions, cheese and marjoram and fill into ovenproof ramekins.
Bake in preheated oven (E.-heater: 200°C/ gas: level 3) for approx. 7 minutes.
