Apple pie with cinnamon amaretti crumble

Ingredients for 12-16 pieces:

600 g tart apples
3 tbsp lemon juice
175 g butter
260 g flour
175 g sugar
a little cinnamon
3 eggs (size M)
50 g amaretti biscuits
1 packet vanillin sugar
100 g cornflour
½ packet baking powder
3-4 tbsp. milk
Also:
Grease and breadcrumbs for the mould
Icing sugar for dusting

Preparation:

1. Wash apples, peel if desired, cut into eighths. Cut out the core. Sprinkle with lemon juice.

2. For the crumble, mix 50 g soft butter, 110 g flour, 50 g sugar, cinnamon and 1 egg yolk. Crumble the amaretti a little smaller and mix into the crumble.

3. Cream 125 g butter, 125 g sugar and vanillin sugar. Stir in the eggs and egg whites one at a time. Mix 150 g flour, cornflour and baking powder. Stir in alternately with the milk.

4. Pour the batter into a greased springform pan (24 cm diameter) sprinkled with breadcrumbs. Lightly press in the apple pieces, spread the crumble on top. Bake in the preheated oven (electric oven: 200 °C/gas mark 3) for approx. 50 minutes. Leave the cake to cool and serve dusted with icing sugar.

Preparation time approx. 1 ½ hours (without waiting time).
