Potato salad with mustard gherkins and silver onions

Ingredients for 4 people:

800 g waxy potatoes
1 leek
salt
1 jar (370 g; 190 g trimmed) of silver onions
200 g mustard gherkins in a jar
150 g Spanish salami in fine slices
50 ml pineapple juice
5 tablespoons wine vinegar
pepper
8 tablespoons olive oil

Preparation:

1. Cook potatoes in boiling water for about 20 minutes. Then rinse in cold water, peel and let rest. In the meantime, clean and wash leek, cut into fine rings. Cook in boiling salted water for about 4 minutes. Also rinse in cold water and let drain.

2. Drain silver onions and mustard gherkins as well. Mustard cucumbers slightly
potatoes into slices. Mix prepared ingredients and salami.

3. Heat pineapple juice and vinegar. Season with salt and pepper. Drizzle over the mixed ingredients while still hot. Mix in oil and let sit for about 1 hour. Season again and serve.
