Bell pepper salad with marinated feta cheese

Ingredients for 4 people:

For the feta cheese:

200 g feta cheese
4 tsp. chopped thyme
4 tablespoons olive oil
grated peel and juice of 1 organic lime
coarse pepper
Furthermore you will need
2 each red and green peppers
1 large onion
30 g dried plums
salt
some Tabasco

Preparation:

1. Dice feta cheese.

2. Drizzle olive oil and lime juice over it. Add lime zest, pepper and thyme and mix gently. Cover and let stand for a few hours.

3. Cut a lid off the peppers. Remove the seeds and the white ribs, rinse the peppers. Then finely slice. Peel onion and cut into fine rings. Cut prunes into small pieces. Mix everything and season with salt and Tabasco. Mix loosely with the marinated feta cheese and serve.

Tip: The marinated feta cheese is delicious with white bread or farmhouse bread. But you can also mix it with vegetables and fresh salads.
