Currant crumble

Ingredients for approx. 12 pieces:

For the crumble:

300 g flour
120 g sugar
250 g butter, warm
1 egg yolk (M)
Also:
500 g red currants
1 packet bourbon vanilla sugar
2 tbsp raspberry jam

Preparation:

1. Mix flour with sugar. Add butter in pieces and the egg yolk and knead everything into crumbles. Put about 2/3 of the crumble in a quiche tin (27 cm diameter) and flatten the base.

2. Rinse the currants and remove the berries from the panicles with a fork. Mix the currants with the vanilla sugar and jam and spread over the base. Sprinkle the rest of the crumble over the top.

3. Bake in a preheated oven at 200°C (gas mark 3-4, fan oven 180°C) for approx. 40 minutes. Best served lukewarm.
