Small schnitzel skewers with peach

Ingredients for 4 people:

400 g pork schnitzel, in approx. 8 mm thick slices
Salt, pepper
60 g cornflakes
40 g grated parmesan
a little flour
1 egg (M)
2 tbsp breadcrumbs
oil for frying + a few drops for the grill pan
a few sprigs of thyme
8 peaches
Wooden skewers

Preparation:

1. Cut the pork cutlets into bite-sized pieces. Season with salt and pepper. Crumble the cornflakes and mix with the Parmesan. Dredge the cutlets first in flour, then in beaten egg and finally in the cornflakes and Parmesan mixture.
Turn. Sprinkle thinly with breadcrumbs and tap the breading lightly.

2. Heat a little oil in a frying pan. Fry the thyme sprigs in it for a few seconds. Remove from the pan with a fork and drain on kitchen paper. Then add about 1 finger's width of oil to the pan and heat it up. Fry the cutlets in it until golden brown on both sides. Cover the baking tray with baking paper and place the cutlets on it. Place in a preheated oven at 80°C (gas: level 1, fan oven: 60°C) and keep warm for about 10 minutes.

3. Halve the peaches. Brush a grill pan with a few drops of oil and heat. Grill the peaches briefly on all sides.

4. Stick the cutlets and peaches together with wooden skewers and garnish with thyme.

Tip: Serve with a chilli sauce.
