Almond pudding with nergi

Ingredients for 4 people:

For the pudding:

500 ml almond drink
1 sachet vanilla pudding powder
50 g sugar
150 ml whipped cream

Also:

4 tbsp sugar
40 g flaked almonds
200 g nergi (kiwi berry)

Preparation:

1. Mix 100 ml almond drink with the vanilla custard powder until smooth. Bring the rest of the almond drink to the boil, add the sugar and stir in the pudding powder. Bring everything to the boil once while stirring. Allow the pudding to cool, stirring from time to time.

2. In the meantime, caramelise the sugar until golden. Add the flaked almonds
and stir until caramelised. Pour onto a piece of baking paper and leave to cool.

3. Rinse and clean the nergi and cut into slices.

4. Whip the cream until stiff and fold into the pudding. Pour the pudding into glasses or small bowls. Break the almond brittle into pieces and place on top of the pudding together with the nergi.

Preparation time approx. 25 minutes + chilling time.
