Grilled pumpkin skewers

Ingredients for 4 skewers:

500 ml vegetable stock
250 g pumpkin (peeled and seeded)
3 tbsp olive oil
1 pinch of salt
1 tbsp sugar
1 clove of garlic, chopped
1 tsp mustard
juice of ½ lemon
250 g pork loin
2 spring onions
Salt, pepper
Parsley
Barbecue sauce

Preparation:

1. Bring the stock to the boil. Cut the pumpkin into 8 cubes and cook in the stock for 4 minutes until firm to the bite. Remove the pumpkin from the stock and rinse with cold water.

2. Mix the oil, salt, sugar, garlic, mustard and lemon juice together. Cut the meat into 8 cubes and add to the marinade. Cover and leave to marinate in the refrigerator for an hour.

3. Cut the spring onions into 8 large pieces. Arrange the meat, pumpkin and
onions alternately on 4 skewers. Season with salt and pepper and grill on all sides for approx. 8 minutes.

4. Sprinkle with parsley before serving. Serve with barbecue sauce and
enjoy.

Preparation time approx. 40 minutes (plus waiting time).
