Fillet skewers with herb-roasted potatoes

Ingredients for 4 people:

6 medium potatoes (600 g)
4 tbsp olive oil
1 small sprig of rosemary
4 stems thyme
250 g pork fillet
Salt, ground pepper
8 cocktail tomatoes
4 slices salami
1 tbsp oil
1 tbsp butter
2 slices Gouda (50 g)
Wooden skewers

Preparation:

1. Peel, wash and cut the potatoes into wedges. Heat the olive oil in a frying pan and fry the potatoes in it for 20-25 minutes. Fry the herbs for the last 5 minutes.

2. Cut the pork fillet into pieces and season with salt and pepper. Rinse the Tomatoes. Put the meat, salami and tomatoes on oiled wooden skewers. Heat the oil in a non-stick frying pan and fry the skewers for about 6 minutes. Cut the Gouda into strips, place on the skewers, cover and fry for 2-3 minutes.

3. Season the potatoes with a little salt and pepper. Arrange the potatoes and skewers together.

Preparation time approx. 45 minutes
