Tomato and avocado salad

Ingredients for 4 people:

500 g cherry tomatoes
2 mini cucumbers
4 spring onions
2 avocados
Juice of 1 lime
2 tbsp olive oil
Salt, pepper
a few basil leaves
2 tbsp pumpkin seeds
40 g Sweet Paprika crisps

Preparation:

1. Rinse, clean and halve the tomatoes. Rinse the cucumbers and peel with a peeler and cut into thin strips down to the core. Clean the spring onions, rinse and chop very finely.

2. Halve the avocados, peel, remove the stone and cut into pieces. Add the lime juice and olive oil and mix gently. Season well with salt and pepper.

3. Mix the tomatoes, cucumber and spring onions. Loosely mix in the avocados, basil leaves and pumpkin seeds. Season with salt and pepper.

4. Place the tomato and avocado salad in glasses. Just before serving, crumble crisps over the top.
