Ingredients for 6 pieces:
For the waffles:
90 g soft butter
60 g sugar
2 packets vanilla sugar
2 eggs (L)
150 g flour
1 pinch of baking powder
100 ml milk
30 g chocolate chips
Grease for the waffle iron
For filling:
1 jar (720 g) morello cherries
2 tbsp cornflour
2 tbsp sugar
300 ml whipped cream
Pulp of 1 vanilla pod
2 sachets of cream thickener
Also:
Icing sugar to dust if desired
Preparation:
1. Beat butter with sugar, vanilla sugar and eggs until well blended. Mix flour with baking powder and stir in alternately with the milk. Leave the dough to rest for approx. 15 minutes. Then mix in the chocolate chips.
2. Lightly grease and heat a waffle iron. Bake waffles (approx. 4-5) from the batter. Leave to cool.
3. Place the morello cherries in a sieve and collect the liquid in a saucepan. Bring the juice to the boil. Mix the starch with a little cold water and stir into the juice. Add sugar. Bring the juice to the boil while stirring. Stir in morello cherries. Allow the cherry compote to cool, stirring occasionally.
4. pour the cream into a bowl. Add the vanilla pulp. Whip until stiff, adding the cream thickener.
5. Spread the vanilla cream and cherries on the wafers and form a tower. Dust with icing sugar to taste and serve immediately.
