Bell pepper and onion pan with feta cheese

Ingredients for 4 people:

500 g peppers (mixed)
6 onions
6 tablespoons olive oil
1 sprig of rosemary
1 bunch of thyme
2 slices of toast
1 clove of garlic
200 g feta cheese
salt, coarse ground pepper

Preparation:

1. Quarter and clean the peppers, removing the white seeds and ribs. Rinse and roughly chop the peppers. Peel onions and coarsely dice.

2. Heat 5 tablespoons olive oil. Fry peppers and onions for 10 minutes. Remove rosemary needles and thyme leaves from the stems and fry them to the end.

3. Dice the toast. Peel garlic. Heat remaining olive oil in a second frying pan. Fry toast in it, add garlic.

4. Crumble feta cheese and mix into the paprika. Heat for a few seconds. Season with salt and pepper. Arrange the garlic croutons on top. Serve with mashed potatoes and a fresh salad.
