Popular Italian restaurant Pastability on Cartergate, Newark, set to reopen with new owner Takaharu Sato, who trained as a chef in Tokyo, Japan

A popular town centre restaurant is set to reopen with new owners but a familiar feel.

Pastability on Cartergate, Newark, has long been a popular spot for everything from fresh cooked food to coffee and gelato.

New owner Takaharu Sato, or Taka as he likes to be known, is an experienced Japanese chef but is keen to maintain all the things people love about the eatery.

For the past few months Taka has been working with the previous owners to get Pastability ready, and will open the doors to customers again on Monday, May 20.

“I have been training as a chef since I was 18-years -old,” said Taka.

“I started off as a kitchen porter at a Korean restaurant in Tokyo — from here I worked hard and trained, becoming one of the chefs at several top restaurants and banquet establishments in Tokyo, places that served Japanese nobility and royalty.

“When I moved to the UK, I moved towards French cuisine, so I began training and from there I have worked at some of the best restaurants in the UK.

“When I open, I will be continuing on with how Pastability was previously, serving food and beverages, just with my own twist.”

With his years of culinary experience, the new menu will consist of Italian and French food, although a traditional English breakfast will also be served in the mornings.

The trained chef will also be making a range of homemade cakes and pastries, such as macarons and éclairs, and the ice cream and milk shakes people know and love will also be served.

Now Taka is excited for his new journey, saying: “I have been wanting to become a business owner since I was 15-years-old.

“During my time living in the UK I have been searching for the prime opportunity to do this — having no luck.

“But with Pastability it has finally given me the opportunity to fulfill that dream and when I met the previous owner, we decided I was a great match for Pastability and its history.

“The interior will be having a slight refresh, but it will still feel welcoming and like you're at home relaxing.”

Pastability will be open Monday to Saturday, from 8am to 4pm each day.
