Coconut strawberry dessert is cool, easy and refreshing on hot days

There's a special time of year when strawberry season reaches its peak and gives you the chance to enjoy them not only in familiar ways, but also to some try out some new twists.

One is in the well-loved combination of sugared strawberries with milk, for some the taste of childhood.

If you were lucky enough to grow up eating ripe, sweet strawberries from the garden, you will know they are even tastier than those bought from a supermarket.

For those instances when you've got some ageing or less fragrant strawberries or just too many to handle, this brief recipe - so short it is barely feels like a recipe - offers a quick way spice them up again.

Ingredients:

  • 500 g strawberries
  • 25 g vanilla sugar
  • 500 ml iced coconut drink
  • ice cubes (optional)

Preparation:

  • 1. Slice your strawberries into small pieces and sprinkle the vanilla sugar over them. Leave to stand for half an hour while the strawberries produce some juice.
  • 2. Pour the strawberries into bowls then add the chilled coconut drink to create a refreshing dessert for hot summer days.

Alternatively, you can also put the strawberries, ice cubes and coconut drink in a punch bowl and serve it as a non-alcoholic punch. A sprig of lavender skewering some fresh strawberry slices is a nice final touch.
