Cheese spaetzle
Ingredients for 4 people: 500 g flour (finely sifted)4 eggs (M)saltabout ¼ l water2 onions1 tsp butter250 g Emmental cheese2 stalks marjoram Preparation: 1. Mix flour, eggs, 1 pinch of salt and water to make spaetzle dough. Beat welluntil it bubbles. Let dough rest for ½ hour. 2. Meanwhile, peel onions, cut into rings. Fry in hot butter until golden brown. Grate cheese. Wash marjoram, pluck leaves. 3. Bring lightly salted water to the boil. Scrape spaetzle dough with knife into(it's easier with a spaetzle slicer).
