Caramel - Apple - Cheesecake

Ingredients for approx. 12 pieces:

3 medium sized tart apples
3 tbsp + 100 g sugar
3 tbsp lemon juice
500 g double cream cheese
200 g sour cream
6 eggs (size M)
1 sachet vanilla pudding powder (for ½ litre; for cooking)
100 g caramel spread
100 g butter
125 g flour
1 heaped teaspoon baking powder
5 tbsp milk
salt
fat and approx. 75 g flaked almonds for the tin
You will also need:
Springform pan 26ø

Preparation:

1. Preheat oven to 175°C top and bottom heat (fan oven not suitable / gas mark 2).
2. Wash, quarter and core the apples. Dice the flesh and mix with 1 tablespoon of sugar and lemon juice. Mix cream cheese, sour cream, 50 g sugar, 3 eggs, pudding powder and caramel spread until smooth.

3. Separate the 3 eggs. Cream butter and 50 g sugar. Stir in the egg yolks stir in. Mix flour and baking powder. Alternate with milk and briefly stir in. Beat the egg whites and 1 pinch of salt until stiff and fold in.

4. Pour the mixture into a greased springform pan (26ø) sprinkled with flaked almonds and bake in the preheated oven for approx. 12 minutes.

5. Remove the cake from the oven, pour the prepared cream cheese mixture on top. Spread the apple pieces and bake at the same temperature for approx. 45 minutes. Bake. Remove and sprinkle with 2 tablespoons of sugar while still hot.
