Apple mango gazpacho

Ingredients for 4 people:

600 g tomatoes
1 jar (355 g) apple & mango puree
grated peel of 1 organic orange
salt
1 pinch of chilli powder

Preparation:
1. Score tomatoes crosswise and cut out the stem end in a wedge shape. Scald in boiling water for a minute. Rinse tomatoes in cold water and peel. Cut tomatoes into pieces.

2. Finely puree the tomatoes together with the apple & mango puree and the grated orange peel. Season to taste with salt and chilli. Chill well.

Tip: If desired, mix finely chopped coriander greens into the gazpacho.

Preparation time approx. 15 minutes + chilling time
