Potato salad with meatballs and beans

Ingredients for 4 people:

800 g waxy potatoes
300 g string beans
Salt
1 tin (425 g; 265 g drained) kidney beans
3 tomatoes
1 red onion
6 tbsp red wine vinegar
100 ml vegetable stock (instant)
Pepper
Sugar
5 tbsp sweet and sour chilli sauce
300 g minced beef
1 egg (S)
2 tbsp breadcrumbs
2-3 tbsp oil

Preparation:

1. Cook potatoes in boiling water for approx. 20 minutes. Then rinse in cold water, peel and leave to rest. In the meantime, clean, wash and chop the beans. Cook in boiling salted water for about 15 minutes.

2. Rinse and drain the kidney beans. Clean, wash and quarter the tomatoes. Remove the inside of the tomatoes and cut the flesh into fine strips. Slice the potatoes.

3. Peel and finely dice the onion. Heat vinegar, stock and onion cubes. Season with salt, pepper and sugar. Mix the prepared salad ingredients, hot stock and chilli sauce. Mix and leave to stand.

4. Knead the minced meat, egg and breadcrumbs. Season with salt and pepper. Form small Form small balls and fry in hot oil for approx. 4 minutes, turning. Mix with the salad, season again and serve.
