Mozzarella with berries

Ingredients for 4 people:
40 g pine nuts
3 tbsp lemon juice
5 tsp liquid honey
125 g blueberries
125 g raspberries
250 g mozzarella
a small handful of mint leaves

Preparation:

1. Toast the pine nuts in a small frying pan until fat-free. Pour onto a plate.

2. Mix the lemon juice with the honey. Sort the berries and pour the lemon juice-honey mixture over them. Mix carefully.

3. Drain the mozzarella well and cut into slices. Layer the mozzarella slices and mint leaves on top of each other. Arrange together with the berries.
