Spaetzle onion pan

Ingredients for 2 people:

250 g onions
2 tablespoons flour
Salt
Pepper from the mill
½ bunch flat-leaf parsley
3 tbsp clarified butter
1 pack (400 g) egg spaetzle from the fresh food counter

Preparation:

1. Peel the onions and cut into rings. Season flour with salt and pepper. Wash the parsley, pluck the leaves and chop coarsely (set aside some for decoration if desired).

2. Heat 1 tablespoon of lard in a pan. Fry the spaetzle in it, turning, for approx. 5 minutes. Season with salt and pepper, fold in the parsley.

3. Mix the onion rings with the flour. Fry in another pan with 2 tbsp heated lard until golden. Fry in another pan with 2 tbsp heated lard until golden brown and crispy.

4. Serve the spaetzle and onion rings garnished with parsley.

Preparation time approx. 15 minutes
