Grilled octopus (Ochtapódi sti skára) / Octopus with noodles (Ochtapódi me koftó makaronáki)

1. grilled octopus

Ingredients for 4 people:

600 g octopus (octopus)
350 ml white wine
coarse sea salt
2 cloves of garlic
½ tsp each dried thyme and oregano
Pepper from the mill
6 tbsp olive oil
2 lemons

Preparation:

1. Wash the octopus, place in a large pot. Pour in white wine and enough water
so that the octopus is covered. Salt and bring to the boil. Simmer gently for 10-15 minutes. Leave to cool in the broth.

2. Drain the octopus. Cut off the tentacles and cut into larger pieces. Peel and roughly chop the garlic. Grind the garlic in a mortar with the herbs, a little salt and pepper, gradually adding the olive oil.

3. Heat a grill pan. Fry the octopus on all sides for about 10 minutes. Cut the octopus into pieces and serve with lemon wedges.

2. octopus with noodles

Ingredients for 4 people:

500 g octopus
400 ml white wine
coarse sea salt
600 g ripe tomatoes
3 onions
4 cloves of garlic
6 tbsp olive oil
1 tsp oregano
Salt, ground pepper
500 g short tubular noodles
2 tbsp chopped parsley

Preparation:

1. Wash the octopus, place in a large pot. Pour in 300 ml white wine and enough water to cover the octopus. Salt and bring to the boil. Simmer gently for 10-15 minutes. Leave to cool in the broth.

2. Drain the octopus and cut into small pieces. Score the tomatoes crosswise.
Scald in boiling water for 1 minute, rinse in cold water and skin. Quarter the tomatoes, remove the seeds and dice the flesh. Peel the onions and finely dice the onions and garlic. Heat the olive oil and fry the onions and garlic until golden brown. Add the octopus and oregano and sauté briefly. Add the tomatoes and braise for 5 minutes. Pour in the rest of the wine and simmer for 20 minutes. Season with salt and pepper.

3. Cook the pasta al dente in plenty of boiling salted water according to the instructions. Pour off and leave to drain. Mix into the sauce and serve sprinkled with parsley.
