Cream cheese and paprika dip

Ingredients for 4 servings:

1 onion
2 yellow peppers
1/2 red bell bell pepper
2 tablespoons olive oil
5-6 tablespoons vegetable stock (from the jar)
salt, pepper
125 g cream cheese Sweet Chili

Preparation:

1. Peel and finely dice onion. Quarter, clean and rinse the peppers. Finely dice a quarter of the yellow bell pepper and the red bell pepper and set aside. Peel and dice the rest of the yellow bell pepper with a peeler.

2. Heat the olive oil. Saute yellow bell pepper and onion until soft, adding vegetable stock. Allow to cool.

3. Place peppers in a high mixing bowl and puree finely. Stir in cream cheese and season with salt and pepper. Mix in the diced peppers set aside.

Serve with grilled chops, olives and grilled or fried zucchini.

Preparation time approx. 20 minutes + cooling time
