Mini - chocolate cake with cherries

Ingredients for 8 pieces:

100 g soft butter
100 g sugar
1 packet bourbon vanilla sugar
1 tsp cinnamon
2 eggs
2 tablespoons cocoa
125 g flour
1 tsp. baking powder
75 dark chocolate chips
150 g cherries, pitted (or from the jar)

Decoration:

2 tablespoons powdered sugar
Colored sugar sprinkles and sugar figures to taste

Preparation:

1. Mmix butter, sugar, bourbon vanilla sugar and cinnamon. Add eggs one at a time and stir in one at a time for at least 2 minutes.

2. Mix cocoa, flour, baking powder and chocolate shavings and stir into the egg mixture. Fold in the cherries and pour the batter into a well greased and floured brioche dish and bake in a preheated oven at 175° (gas mark 3) for approx. 40-45 minutes.

3. Leave to rest in the tin for 5 minutes and then turn out carefully onto a cake rack.

4. Dust cooled cake with powdered sugar and decorate with sugar figures as desired.
