Apricot Orange Crumbles

Ingredients for 4 people:

4 oranges
50 g sugar
1 packet vanilla sugar
2 tsp grated organic orange peel
150 g dried apricots
25 g chopped pistachios

For the crumble:

150 g flour
60 g sugar
1 pinch of cinnamon
90 g melted butter
30 g flaked almonds
Also:
Butter for the ramekins

Preparation:

1. Squeeze two oranges. Put juice, sugar, vanilla sugar and orange peel in a pot and bring to a boil. Cut apricots into strips, add and simmer for about 5 minutes. Transfer to a sieve and collect the decoction.

2. Fillet the remaining oranges, reserving the juice. Add juice to the broth. Add orange fillets and pistachios to apricots and mix.

3. For the crumble, mix flour with sugar and cinnamon. Add butter and knead into crumbles. Loosely mix in flaked almonds. Remove 4 tablespoons of crumble. Mix the rest with the fruit.

4. Pour crumble-fruit mixture into buttered cocottes, top with remaining crumble. Pour the mixture carefully around the edges. Bake in the preheated oven at 200 degrees (gas: level 3-4, convection oven: 180 degrees) for approx. 20-25 minutes.

Serve with vanilla sauce if desired.
