Tomato bread with avocado butter

Ingredients for 4 people:

For the avocado butter:

1 ripe avocado (e.g. Hass)
a few drops of lime juice
75 g soft butter
grated peel of 1/2 organic lime
1 pinch of ground, dried chili pepper
salt, pepper from the mill

Also:

some baby lettuce mix
4 medium tomatoes
4 slices of crusty bread
a few stalks of chives

Preparation:

1. Halve the avocado, remove the pit and spoon the flesh out of the skin. Add a few drops of lime juice and mash with a fork until mushy. Beat butter until creamy. Add avocado, lime zest, chili, salt and pepper and mix everything together. Chill briefly.

2. Rinse salad mix and pat dry. Rinse tomatoes and cut into slices.

3. Spread slices of bread with avocado butter, top with tomato slices and place a few lettuce leaves on top. Rinse chives, shake dry and cut generously over tomato breads with scissors.
