Lemon crumble cake

For 18 pieces:

Ingredients:
Crumble:
200 g flour
80 g sugar
1 untreated lemon
1 egg yolk
120 g liquid butter
Mixing dough:
250 g butter
250 g sugar
2 untreated lemons
1 pinch of salt
5 eggs
250 g flour
120 g cornstarch
3 tsp. baking powder
For dusting:
3 tablespoons powdered sugar

Preparation:

For the crumble, mix the flour, sugar, grated lemon zest, egg yolk and melted butter with two forks to make crumbles. Mix butter, sugar, grated Lemon zest and salt. Add eggs one at a time, stirring each egg in for 2 minutes. Combine flour, cornstarch, and baking powder and mix with the squeezed lemon juice and stir in briefly. Pour the dough onto a greased baking tray. Sprinkle with crumbles and bake in a preheated oven at 175° or gas mark 3 for approx. 35-40 minutes. Leave to cool and dust with powdered sugar.
