Strawberry Tortilla "California Style

Ingredients for 4 people:

500 g strawberries
2 avocados (e.g. Hass)
Juice and grated zest of 2 organic limes
100 g yoghurt, 0.1 % fat
2 tbsp icing sugar
1 pinch of coarsely ground chilli pepper
1 pinch of salt
1 small bunch of rocket
some bean sprouts
4 tortilla patties
a few drops of oil
4 tsp roasted, salted peanuts

Preparation:

1. Rinse, clean and slice the strawberries.

2. Cut the avocados in half, remove the stone and scoop the flesh out of the skin. Blend the avocado flesh with the lime juice and zest, yoghurt, icing sugar and chilli. Season with a pinch of salt.

3. Rinse and clean the rocket. Rinse the bean sprouts.

4. Grill the tortilla patties on both sides in a grill pan lightly brushed with oil.

5. Spread the tortilla patties with the avocado cream. Top with strawberries, rocket and bean sprouts. Serve immediately sprinkled with peanuts.
