Coconut Panna Cotta with strawberry salad

Ingredients for 4 servings:

4 leaves gelatine
500 ml coconut milk
2 tbsp rum
500 g strawberries
A few leaves of fresh mint
4 tbsp orange juice
40 g icing sugar

Also:
Fresh coconut shavings for garnish

Preparation:

1. Soak gelatine in cold water. Heat the coconut milk, dissolve the gelatine in it and stir in the rum. Pour the mixture into glasses and chill for at least 4 hours.

2. Wash, clean and quarter the strawberries. Rinse the mint leaves, dab dry and chop finely. Mix the leaves, strawberries, orange juice and icing sugar.

3. Before serving, pour the strawberry salad onto the panna cotta, sprinkle with
garnish with mint and coconut shavings.
