Ingredients for 4 people:
12 slices of ciabatta
3 tablespoons olive oil
For the tomatoes:
200 g cherry tomatoes
1 tablespoon olive oil
1 tablespoon capers
salt, pepper
Also:
12 anchovy fillets
200 g mozzarella
Basil leaves
Preparation:
1. Fry ciabatta slices in hot olive oil until golden brown on both sides. Transfer
on paper towels.
2. Rinse tomatoes and cut into quarters. Heat olive oil. Sauté tomatoes for 1-2 minutes. Mix in capers and season with salt and pepper.
3. Pat dry the anchovy fillets. Cut mozzarella into slices.
4. Cover ciabatta slices with mozzarella and heap tomatoes on top. Top with
anchovy fillets and basil leaves.
