Veal chops with ginger pepper apricots

Ingredients for 4 persons:

4 veal chops (cut from the loin, approx. 300 g each)
salt, pepper
4 tablespoons clarified butter
1 can (240 g) of apricots
1 piece of ginger (approx. 25-30 g)
2 tsp. pickled green pepper

Preparation:

1. Season veal chops with salt and pepper. Heat 2 tablespoons clarified butter in a frying pan. Sear chops on both sides until hot. Reduce heat. Fry chops for approx. 15 minutes, turning occasionally. Remove chops from pan and keep warm.

2. Drain apricots. Peel and finely chop ginger. Add remaining clarified butter to pan. Add apricots, ginger, and pepper and braise. Stew the apricots briefly over high heat. Serve the veal chops with the apricots.
